    Yay - it's British Pie Week! In case you missed it Yay - it's British Pie Week! In case you missed it last year we are unashamedly sharing the recipe for our fabulous Love Reigate pie from @the_social_table_uk - it's bloomin delicious! Made with Ruby Ale from @crumbsbrewing and Surrey farm beef from @robertandedwards TO MAKE THE PASTRY: Dice the cold butter into 2cm chunks and rub together in a large bowl with the flour and salt until it resembles breadcrumbs. Add the beaten egg and cold water, knead briefly until it forms a slightly tacky dough, wrap in cling film and put it in the fridge until needed TO MAKE THE PIE: Finely dice the shallots, carrots, mushrooms, garlic and mince the rosemary Heat a large pan on a medium heat then add the butter. Once foaming add the vegetables and sweat for 5 minutes or until slightly golden Remove the vegetables from the pan and turn up the heat. Dust the beef shin in the seasoned flour, shake off any excess then seal the beef on both sides (add a touch of oil if needed) Once browned all over return the vegetables to the pan then add the marmite followed by the stocks, Crumbs Ruby Ale and bay leaf (be careful adding any salt, the marmite and stocks help season the dish) Turn the heat down to a gentle simmer and leave to cook with the lids on for 2 hours or until the meat starts to flake and the sauce has thickened, taste and adjust the seasoning if needed Pour the mix into a pie dish approx 25cm wide and leave to cool Roll out your pastry to a thickness of 3mm and cover the pie. Trim off any excess pastry. Whisk the egg yolks and salt together to make the egg wash, give the pastry a few coats leaving 5mins in-between. Use any trimmings to make some creative decorations Bake in a pre-heated oven @ 190c for 30 - 40 minutes There you have your Crumbs Ruby Ale & Surrey Farm Beef Shin Pie ready to serve!
